Hey guys! Welcome back to my blog. Today I’m going to talk about a recipe I found on Pinterest the other day. Pinterest always has the best recipes. It’s called Tomato and basil tortellini soup. I’m not going to lie, but this is the first time I’ve made anything from Pinterest. I decided that if it went well, I would continue to discover new recipes, make them, and share them with you guys because who doesn’t love good food?
So I decided to make this soup because it’s pretty much fall and this seemed like a pretty good fall soup to make. Plus, who doesn’t love soup?
- 1/4 cup of fresh basil
- 1 basil
- 1 medium carrot
- 1 tsp of garlic powder
- 1 can of diced tomatoes
- 1/2 white onion
- 5 cups of fat free chicken stock
- 1 jar of Ragu traditional pasta sauce
- 16 oz of 3 cheese tortellini
- 1/2 tsp of pepper
- 1 tsp of salt
- 1 tbsp of olive oil
- 3/4 cup of fat free half & half
- 1 Parmesan cheese
- 1/2 of skim milk
Now that was a lot of ingredients. I didn’t know all of those little things could make something so delicious.
First we put the onion, carrot and olive oil in a 6 quart pot. We simmered over medium heat until the onions became translucent. Then we added fresh basil, chicken stock, milk, half & half, pasta sauce, and diced tomatoes. Once all those are in we stir it of course. Next came the salt, pepper and garlic powder and guess what? Once you put all that in you stir it. Now you have to let it simmer for about 20 minutes. After it simmers you can add the tortellini and let it simmer once again for 15-20 minutes. When it’s ready to be served sprinkle some parmesan cheese on and you’re ready to go.
Overall it turned out so good. I liked it, Andrew liked it (he likes everything though), my parents liked it and Carly liked it. I would definitely make it again and I think all of you should try! I’ll have the link so the soup below so you can check it out. I hope you all liked reading! 💙
